Tokyo Kissa is our darkest blend yet, inspired by the quiet calm of traditional Japanese kissatens, or coffeehouses, and the dark roasts crafted within them. We embodied the detail, care, and commitment to quality of the kissaten artisans — with their careful sourcing, in-house roasting, and slow, methodical filtering.

Brewed on our nel drip, this coffee takes on new dimensions. This slow, deliberate extraction reveals a silkier body and heightened sweetness to temper the darker features of this blend.

While dark roasts are often considered to be made of lower-quality beans roasted excessively to mask unwanted flavors, we know dark doesn’t have to mean dull. We recalled the roasts found in the original kissatens of Japan — deep yet distinct flavors full of nuance.
To achieve a dark roast that upholds this level of integrity, we punctuated organic Latin American coffee with a washed Ethiopian component for a blend with complex layers, a smooth and heavy body, and a beautiful sweet and smoky flavor.

Pour Over Recipe for Tokyo Kissa
1. Add 25 g ground coffee to your Blue Bottle dripper.
2. Heat 250 g water to 180°F (82°C).
3. Begin with a spiraling pour of 50 g water to achieve the bloom — three spirals in and three spirals out over a period of 10 seconds.
4. When the bloom slows and the grounds settle, begin your next spiraling pour of 100 g water over 10 seconds.
5. Repeat this pour one more time for a total of 250 g water.
6. Enjoy your kissaten roast, brewed strong for the ideal body and flavor.
